Jamie,

When running OpenVPN, Windows "sees" two network adapters -- the TAP-Win32 and
the ethernet (and possibly more, depending on your configuration).

Most applications don't actually know about network adapters.  They try to
establish a connection with a certain IP address and Windows decides which
adapter to use based on a number of factors including the TCP/IP properties of
each adapter, the system routing table, and the current gateway setting (if
you do an "ipconfig /all" and a "route print", you will get most of the
relevant info).

Now some applications which try to be "smarter" than the average TCP/IP app
may indeed know about network adapters, and they may need special settings to
tell which adapter to use to connect to a given resource.

OpenVPN doesn't really have any control how this works -- it only exports the
TAP adapter to the system, which means that the system will behave in the same
way as if it had two ethernet adapters connected.

So any applications that have a setting buried somewhere in the preferences
telling it which adapter to use, should use the TAP-Win32 adapter if you want
to keep the connection over the VPN.

I don't use outlook, so I can't really give you any specifics there.
