Tony,
You can setup a routed network with OpenVPN and only traffic thats
destined for the remote network will go across the tunnel.
Secondly,
If you have control over the firewall of one or both ends of the
network, then you only need to port forward on the receiving end.
Usually, the client would initiate the connection to the server, the
firewall in front of the server would see the incoming connection and
forward it to the OpenVPN server, then connection would be established.
